Ingredients
- 2 oz. breakfast sausage
- 1 Tbsp. bacon fat
- 1 Tbsp. sifted flour
- 1 cup warm milk
- Salt
- Pepper
- Thyme

Instructions
- 1.Heat 1 Tbsp. of bacon fat in a small cast iron skillet
- 2.When the bacon fat is hot, add 2 oz of breakfast sausage
- 3.Brown the sausage and break it up into crumbles
- 4.Once the sausage is browned, remove from the pan with a slotted spoon and set aside
- 5.Whisk 1 Tbsp. of sifted flour into the bacon fat
- 6.Whisk continuously until the roux starts to turn golden
- 7.Pour in 1 cup of warm milk, whisking continuously
- 8.Return sausage crumbles to the gravy
- 9.Season with salt, pepper, and thyme to taste
- 10.Stir the gravy continuously until it reaches the desired consistency.
- 11.Serve over biscuits.
